Cookies, cookies, cookies
Here we are, just three days past Easter Sunday and I am presenting yet another type of sweet recipe. And not just one recipe or two, but three recipes for sweet treats. Now, you might be thinking that either, the Easter bunny spared our house and didn’t deliver a single sweet egg or that we had too many sweets and that our sugar cravings sky rocketed. Well, neither one of the options is true. But the fact that the kids have holidays and are with me 24/7 calls for constant SNACKS. We need to replenish the energy that we spend boogie boarding, bike riding, swimming or chasing us around the pool (and believe me when I say that I would like to spend my vacation a little bit quieter! But this does not seem to be an option…). Being constantly active requires lots of snacks and often times I even find our house full of our children’s friends- which means even more snacks… Anyway, this is a great time and probably the last beautiful days of summer and I am definitely NOT complaining.
So, back to the snacks. I find that the easiest snacks to take along are cookies and veggie sticks. There is not much to write about cutting different types of raw vegetables into various shapes, but there is definitely a lot to say about cookies. Loved by everyone, you can find hundreds of recipes in every cookbook or on the web. The basic dough of most of them is made of eggs, oil/ butter, white sugar and white flour. So we are talking saturated fats, cholesterol, refined sugar and refined flour. Any nutrients? Nope. Would that be the perfect dish to replenish your energy? Definitely not. Is there any way to turn them into a healthy snack? Definitely YES!
Swap the sugar for date paste, swap the oil with apple sauce and use oats and whole grain flour. And if you need to add anything, use unsweetened cranberries, raisins or a small amount of dairy free chocolate chips (remember, a little goes a very long way!).

Instead of using chocolate chips, I added a small scoop of coconut vanilla ice cream when the kids ate the cookies at home. If you want to avoid sugar altogether, you can quickly whip up some banana ice cream.

recipe nr two: one bowl plant-based raw cacao cookies

recipe nr three: cranberry chocolate chip cookies
I only used less than 1/4 cup of chocolate chips and that amount was more than enough for our taste.
