Gingerbread Men and Eggnog for Santa
Decorating the house and setting up our amazing fake Xmas tree finally helped getting me into the holiday groove.See the two stockings in the background? This year, as if one was not enough, our kids found more stockings in one of the numerous Xmas decoration boxes in the garage and put up TWO STOCKINGS each for Santa to fill!!
Add some traditional music, homemade plant-based eggnog and- of course- cookies. My daughter’s favorite cookies are gingerbread men, which I made last year before Xmas and posted on this blog. A lot has changed since last Xmas and as I had a closer look at my recipe, I realized just how differently I approach things nowadays. No need for vegan butter or refined sugar, which to my utter surprise I found in that particular recipe. The only time I used vegan butter in the past months was for a pie crust at Thanksgiving. The mention of baking soda in the recipe although there’s no acidic ingredient among the remaining ingredients, put a little smile on my face. For so long, I had no idea when to use baking soda and baking powder and what the difference between them is (if you are still unsure about it, check out my post about these two leavening agents http://plantbasedhappy.com/?p=4453). This year, I substituted unsweetened applesauce for the butter and date paste for the refined sugar. And, of course, I swapped baking soda for baking powder. In the end, you could not tell the difference.

Our children have decided that this year, Santa will not just be spoiled with plant-based gingerbread men, but also with plant-based eggnog instead of cookies and milk. What a lucky man!
Traditional eggnog is made of milk or cream, sugar, raw eggs, an alcoholic spirit and spices. It makes you wonder: How did humans first think downing a spiced and spiked egg-yolk-milk mixture was a good idea? So much to changing recipes and traditions… I think it’s so crucial to always adjust, improve and ultimately change. I am sure there will never be a time when I feel to know it all and it makes life exciting. When I started my blog, I thought I had it all figured out but in that one year, I have picked up so many and interesting new ideas and perspectives. Next on my list of projects: mastering the art of making plant-based cheese, publishing my son’s and my children’s book and starting whole-food plant-based cooking workshops with my children for mom’s and children. This will definitely out my out of my comfort zone 🙂
