MUST DOs THIS WEEKEND

Dear all,

We were lucky to have just enjoyed a beautiful, long weekend. But the best news is that another long weekend is lying ahead of us! We are sandwiched in between two long weekends and it’s a truly wonderful feeling. Some studies have shown that people actually work more efficiently and productive on a four work days/ three days off basis! I can easily understand why. I feel totally motivated and energetic and ready for a busy weekend of ballet competition and book signing (I am just doing the book signing, not the dancing haha). Next to these WANTS, there a couple of MUSTS for our weekend.

Firstly, we simply have to have the most delicious red quinoa pancakes that I made last weekend again for breakfast. The kids are still talking about the incredible taste.

Secondly, I promised them to let them watch “Cowspiracy” on Netflix. As eye-opening as “Blackfish” and as inspiring as “An Inconvenient Truth”, this documentary may be the most important film made to inspire saving the planet. It definitely takes a lot of courage and determination in taking on big powerful corporations and open the public’s eye about the tremendous effects that animal agriculture has on our climate today. If you haven’t watched the movie yet, now might be the right time to do it! The next morning, you can indulge guilt free on quinoa pancakes.

Whole-food plant-based red quinoa cinnamon pancakes:

The pancakes are completely flour less and gluten free. The only thing to remember about this recipe is to soak the quinoa and the oats overnight to activate them.  Top with your favorite fresh berries and a bit of maple syrup.
