Ingredients
  1. 3 handful new potatoes or small round potatoes
  2. 2 handful sugar snap peas, cut in half lengthwise
  3. 2 cups frozen peas
  4. 2 small or one large bunch of green asparagus, trimmed and cut in 1" pieces
  5. 1/2 bunch fresh basil
  6. 1/2 bunch fresh min leaves
  7. 2 small or one large garlic clove, pressed through a garlic press
  8. 1/4 cup pine nuts
  9. zest and juice from one small or 1/2 large organic lemon
  10. sea salt and freshly ground black pepper
  11. 1/4 cup freshly ground pecorino (optional)
  12. 1/4 cup extra virgin olive oil
Instructions
  1. Boil potatoes in a medium saucepan until soft. Drain and set aside.
  2. Meanwhile, roast pine nuts in a small pan.
  3. Puree nuts, fresh herbs, garlic, lemon, zest, oil, salt and pepper in a food processor into a pesto.
  4. Bring water to a boil and sautee asparagus, peas and sugar snap peas for 2 minutes. Drain them.
  5. In a large bowl, mix potatoes with pesto and green vegetables. Grate pecorino cheese on top and serve.
