Beautiful Plant-Based King Cake
This is certainly some refined sugar in this King cake. But certain occasions call for a special traditional cake and this is the healthiest one I could create.
Folding the cake properly to create the special circle might seem a bit overwhelming, but is in fact very easy. If you are not up for a lot of reading, cutting and folding roll the dough in a simple circle and bake it that way. The result will still be great!

For the cake
- 1 package dry yeast
- 1/4 cup warm water
- 1 tbsp maple syrup
- 2 1/2 cups whole meal flour
- 1 tsp salt
- 1/4 tsp grated nutmeg
- 3 tbsp raw sugar
- 6 tbsp vegan butter, cut in cubes
- 3 tbsp egg replacer, mixed with 1/4 cup warm water
- 1/4 cup almond milk
For the filling
- 3/4 cup raw sugar
- 1/4 cup vegan butter, melted
- 1/2 cup pecans, chopped
- 1 tsp cinnamon
For the frosting
- 3/4 cup icing sugar
- 1/4 tsp salt
- 1 1/2 tbsp warm water
For the sprinkles
- Raw sugar
- Yellow, green and purple organic food coloring
Instructions
- In a bowl, mix together yeast with water and maple syrup until you see bubbles. Put aside for 5 minutes.
- Meanwhile, combine flour, salt, sugar and nutmeg in a bowl and mix well. Stir in butter cubes with a fork until the dough resembles coarse breadcrumbs.
- Add flour mix, milk and egg replacer to the yeast mixture, combine well and knead until the dough becomes smooth.
- Transfer to a slightly oiled bowl and let rest for 1 hour in a warm spot until the dough has doubled.
- For the filling combine all ingredients. For the sprinkles divide sugar in three small bowls and mix in the different food coloring.
- Line a baking tray with parchment paper.
- Roll out the dough on a lightly floured surface in a rectangle about 5mm (1/4") thick.
- Cut rectangle lengthwise. Cut each strip in equal triangles with the base about 6cm (3") long.
- Arrange triangles slightly OVERLAPPING on the parchment paper in a circle, bases on the outside, tips pointing inwards.
- Divide the filling among the triangles.
- Grab each triangle base and fold it inwards, over the filling.
- Take the tips of the triangles and fold them outwards, over the base. Slightly press down on the dough. You'll end up with a circular shaped dough.
- Cover the circle with a kitchen towel and let rest for 20 minutes.
- Preheat oven to 375F (175C).
- Brush cake slightly with milk and bake for 25 minutes.
- let the cake cool off. Add the frosting, alternating the different colors.
- Don't forget to hide the king baby somewhere in the bottom of the cake.
