Corn, Avocado and Bean Salad with Vinaigrette
Fresh corn and avocado salad is a deceptively simple combination of these two delicious vegetables. Use sweet fresh or frozen corn. Fill it in a tortilla or eat it simply as a salad.

Ingredients
- 3 large tomatoes, washed and cubed
- 1 large avocado, pitted, peeled and cubed
- 1 can cannelloni beans, rinsed well and drained
- 1/2 sweet onion, chopped
- 2 cups frozen corn kernels
- 1/4 cup fresh parsley, chopped
For the vinaigrette
- 3 tbsp lemon juice
- 1 tbsp extra virgin olive oil
- 1 tsp dijon mustard
- Sea salt, freshly ground black pepper
Instructions
- Place all salad ingredients in a salad bowl and mix well.
- Combine ingredients for the dressing in a small jar with a lid, close and shake vigorously. Pour over salad and serve.
