Grated Coconut with Honey, Cinnamon and Coconut Cream

 A couple of days ago I saw those beautiful brown coconuts in the supermarket and decided to grate a coconut by myself. OMG…it was so much more work than I had expected. I guess it depends on the coconut and if you are lucky you will find one which is easy to work with. With mine, cutting our the meat was hard labour and I ended up with a blister on my finger, but the result was amazing!! The grated coconut meat tasted way better and fresher than the store bought one. I toasted half of it to add to cereal, as a topping on puddings or to use in curries.

This was my first version for which I used pretty big chunks of coconut meat. I would recommend that you use finer grated coconut meat.

Cut out slices of the coconut flesh and scoop out with a small knife.

Peel the coconut strips and wash them.

Grind the coconut meat in a blender until finely grated.

Ingredients
  1. 1 cup of grated coconut
  2. 1/2 cup of coconut cream
  3. 2 tsp cinnamon
  4. 1 tbsp honey
Instructions
  1. In a food processor mix all ingredients together and spoon in empty coconut halved or bowls. If you prefer a more runny consistency add a little bit of water.
