Kale With Orange Cashew Dressing

  1. 4 cups of kale leaves, washed and chopped
  2. 1/2 cup of activated cashews
  3. 1 organic orange, zest and juice
  4. 1 orange, peeled
  5. Pinch of salt (optional)
  6. 1/2- 1 tbsp Crema di Balsamic
  7. 1 cup pomegranate seeds
  1. Cut orange in small pieces.
  2. In a food processor, process cashews with orange juice, zest, salt and Crema di Balsamic until smooth. If you prefer a runnier consistency, add some filtered water.
  3. Combine kale, orange pieces, pomegranate seeds and dressing in a bowl and mix well. Chill for 30 minutes.
