Little Chocolate Coffee Cakes
Nothing brings out the aroma of chocolate more than coffee. This cake is absolute oil free, dairy free and sugar free- so why is it still so delicious? The answer is simple. You don’t need any of the above ingredients to make a great dessert!

Ingredients
- 1 cup plus 2 tbsp whole spelt flour
- Pinch of sea salt
- 3/4 cup raw cacao powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- Heaping 1/2 cup date paste
- 1/2 cup unsweetened apple sauce
- 1/4 cup strong decaf coffee (I use decaf for the kids)
- 1 tsp apple cider vinegar
- 3/4 cup almond milk
Instructions
- Preheat the oven to 170 C (375F).
- Combine the first 5 dry ingredients in a large bowl and mix well.
- Mix the milk and vinegar in a large mixing bowl, and let set for a few minutes to activate. Stir in date paste, apple sauce and coffee.
- Sift the dry ingredients into the wet ingredients and combine well.
- Fill silicone muffin trays with the batter and bake for 15 minutes until a toothpick inserted in the center comes out clean.
