Raw Pear Oat Date Balls

 These balls contain pretty much everything that we like- fresh fruit, dried fruit, nuts and coconut. Make sure you buy organic desiccated coconut without added preservatives.

Raw Pear Oat Date Balls

Ingredients
  1. 1 1/4 cup rolled oats*
  2. 2 tbsp activated macadamia nuts
  3. 1 tsp filtered water
  4. 1 tsp pure vanilla extract
  5. 1 pear, peeled and cored
  6. 1/4 cup organic desiccated coconut and more to coat the balls
  7. 1/4 cup raisins
  8. 1 tsp date paste (or sub with 1 pitted date soaked in water for 5 minutes or maple syrup)
Instructions
  1. In a food processor, grind the nuts until they have a fine consistency.
  2. Add the remaining ingredients and process until smooth.
  3. If the mixture is too dry and won't stick, add another teaspoon of water. if the mixture is too runny, add oats.
  4. Add more date paste to taste.
  5. With moist fingers, form small balls and roll them in desiccated coconut. Store them in a closed container in the fridge or the freezer.
Notes
  1. *activate oats by soaking them in water with a tsp of whey or yogurt and a spoonful of rye or buckwheat flour to reduce as much phytic acid as possible. Rinse them well the next day and dry them in the oven for an hour on low heat.
