Weekly Meal Plan 6
This week I spotted this huge pile of yummy looking coconuts at the supermarket and couldn’t resist buying a brown coconut as well as a fresh Thai coconut. Next to avocados, coconuts are my second addiction! I could really eat them every day.

Anyway, I immediately drank the fresh coconut water, used the fresh meat in a couple of recipes and grated the meat of the brown coconut.
The fresh delicious taste of it was amazing and I couldn’t help but add the grated coconut meat to a lot of my dishes this week. Coconuts are not only delicious, but they’re packed with fiber and minerals, including calcium, iron, magnesium, phosphorus, potassium, sodium and zinc. They also contain vitamin C and folate, an especially important nutrient during pregnancy.
