This pudding is rich in antioxidants, iron, calcium, phosphorus, dietary fiber and other nutrients. It is made with only four ingredients that I usually have in my pantry/ fridge and whipped up in no time. Our children like to eat the pudding for morning snack at school and I am happy to be able to prepare it the night before and to spend less time packing lunch bags in the morning. So it’s basically a win win situation.
Combine all ingredients in the blender, process, done.
I send the strawberries in an extra food container to school as my kids prefer to eat them “clean” and not covered in pudding.
