Almond Spelt Waffles
These waffles are filled with whole grain flour, nuts and citrus fruits. Easy to prepare and fun for all to make. Often times, I place the waffle iron in the middle of the table and everybody helps themselves. Serve them with maple syrup and fresh berries.
Waffles are a great alternative to pancakes and you can even send the individual triangles to school as snack.
Last week, we topped the waffles with sweet, ripe yellow peaches and pecans which turned out to be a delicious combination.
- Juice of 1 grapefruit (1/2 cup; or sub with orange juice)
- 1/4 cup unsweetened apple sauce
- Zest of 1 organic orange
- 1 egg replacer (1 tsp egg replacer mixed with 2 tbsp filtered water)
- 3/4 cup almond milk
- 3 tbsp brown rice syrup
- 1/2 banana
- 1 1/4 cup whole spelt flour
- 1/2 cups almond flour (I grind almonds in my blender into flour)
- 1/2 tsp baking powder
- In a blender, puree the wet ingredients.
- In a bowl, combine the dry ingredients. Pour the wet mixture into the dry ingredients and mix well.
- Preheat the waffle iron, and spray with a bit of cooking spray. Ladle in about 1/2 cup batter per waffle, close the lid and cook for about 4 minutes. Repeat with remaining batter.
- Serve with fresh fruit, maple syrup and on-dairy yogurt.
