Beautiful Plant-Based King Cake

 This is certainly some refined sugar in this King cake. But certain occasions call for a special traditional cake and this is the healthiest one I could create.


Folding the cake properly to create the special circle might seem a bit overwhelming, but is in fact very easy. If you are not up for a lot of reading, cutting and folding roll the dough in a simple circle and bake it that way. The result will still be great!

For the cake
  1. 1 package dry yeast
  2. 1/4 cup warm water
  3. 1 tbsp maple syrup
  4. 2 1/2 cups whole meal flour
  5. 1 tsp salt
  6. 1/4 tsp grated nutmeg
  7. 3 tbsp raw sugar
  8. 6 tbsp vegan butter, cut in cubes
  9. 3 tbsp egg replacer, mixed with 1/4 cup warm water
  10. 1/4 cup almond milk
For the filling
  1. 3/4 cup raw sugar
  2. 1/4 cup vegan butter, melted
  3. 1/2 cup pecans, chopped
  4. 1 tsp cinnamon
For the frosting
  1. 3/4 cup icing sugar
  2. 1/4 tsp salt
  3. 1 1/2 tbsp warm water
For the sprinkles
  1. Raw sugar
  2. Yellow, green and purple organic food coloring
  1. In a bowl, mix together yeast with water and maple syrup until you see bubbles. Put aside for 5 minutes.
  2. Meanwhile, combine flour, salt, sugar and nutmeg in a bowl and mix well. Stir in butter cubes with a fork until the dough resembles coarse breadcrumbs.
  3. Add flour mix, milk and egg replacer to the yeast mixture, combine well and knead until the dough becomes smooth.
  4. Transfer to a slightly oiled bowl and let rest for 1 hour in a warm spot until the dough has doubled.
  5. For the filling combine all ingredients. For the sprinkles divide sugar in three small bowls and mix in the different food coloring.
  6. Line a baking tray with parchment paper.
  7. Roll out the dough on a lightly floured surface in a rectangle about 5mm (1/4") thick.
  8. Cut rectangle lengthwise. Cut each strip in equal triangles with the base about 6cm (3") long.
  9. Arrange triangles slightly OVERLAPPING on the parchment paper in a circle, bases on the outside, tips pointing inwards.
  10. Divide the filling among the triangles.
  11. Grab each triangle base and fold it inwards, over the filling.
  12. Take the tips of the triangles and fold them outwards, over the base. Slightly press down on the dough. You'll end up with a circular shaped dough.
  13. Cover the circle with a kitchen towel and let rest for 20 minutes.
  14. Preheat oven to 375F (175C).
  15. Brush cake slightly with milk and bake for 25 minutes.
  16. let the cake cool off. Add the frosting, alternating the different colors.
  17. Don't forget to hide the king baby somewhere in the bottom of the cake.
