Blueberry Cereal with Coconut Flakes
This is really a kind of emergency breakfast recipe if we run out of healthy sourdough bread , homemade yogurt and I don’t have enough time left to prepare anything else.
You wonder why this delicious looking breakfast bowl is only an emergency type of food?
This is because of the amount of phytic acid that can be found in whole grain products. Phytic acid interferes with the uptake of essential minerals in grains like calcium and phosphorus, because it bind to these nutrients. Only activating grains, nuts, seeds and legumes can reduce the amount of phytic acid. Even the absorption of nutrients of other foods consumed at the same time will be drastically reduced. I would therefore recommend to limit the intake of non activated grains which includes cereal, pasta, non or short fermented breads etc. Find a baker that produces long fermented sourdough bread and stick more to activated oatmeal, activated quinoa breakfasts, acai bowls, yogurt bowls, activated brown rice or barley breakfasts etc.
