Cannellini Beans with Sage and Tomatoes

This is my mother’s favorite recipe. It is so flavorful yet so simple and quick to prepare. It’s one of my emergency weeknight dinners, because I always have the ingredients on hand.

Cannellini Beans with Sage and Tomatoes

Ingredients
  1. 4-5 cups cannellini beans, rinsed well and drained
  2. 1 white onion, chopped
  3. 1 handful of fresh sage leaves, chopped
  4. 3 cups of cocktail tomatoes
  5. 2 tbsp extra virgin olive oil
  6. Sea salt, freshly ground black pepper
Instructions
  1. Heat the oil in a pot and sauté the onions until translucent.
  2. Add tomatoes and sage leaves and cook until tomatoes burst open, for about 7 minutes.
  3. Add the beans and cook, covered, on small heat for 15 minutes.
  4. Season and serve.
Notes
  1. I cook large quantities of cannellini beans for a couple of hours, let them cool off and store them in large glass containers in my fridge. It's the healthiest way to prepare beans. If you don't have them, use 3 cans of cannellini beans.
