Chocolate Cake Rectangles With Strawberries

 This cake is easily thrown together if you are in need for a quick special sweet treat. I only add the frosting on rare occasions because I try to stay away from refined products.

  1. 1 ½ cups wholemeal flour
  2. ⅓ cup raw cocoa powder
  3. 1 teaspoon baking soda
  4. ½ teaspoon salt
  5. 3/4 -1 cup date paste
  6. ½ cup unsweetened apple sauce
  7. 1 cup coffee (for the kids I use decaf)
  8. 2 tsp pure vanilla extract
  9. 2 tbsp apple cider vinegar
  1. Strawberries, washed and halved
Frosting (optional)
  1. 1/4 cup vegan butter, softened
  2. 1/4 cup powdered sugar
  3. 2 tbsp raw cocoa powder
  4. 2 tbsp dairy-free chocolate chips, melted and slightly cooled
  5. 1/2 tsp pure vanilla extract
  6. 1 tbsp unsweetened almond milk
  1. Preheat the oven to 375 degrees F and slightly oil a round 10" square baking pan with cooking spray (sub with parchment paper or use a silicone pan).
  2. Combine the wet ingredients on one bowl and the dry ingredients in another.
  3. Stir dry ingredients into wet ingredients and mix well. Pour batter into the pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let cool off and cut into rectangles.
  4. For the frosting combine a ingredients in a small bowl.
  5. Top cake with frosting and strawberries and enjoy.
