Cinnamon Maca Buckinis

Have you ever seen Buckinis in a store? If so, it was probably a health food store. I am always surprised how expensive they are, yet they are so easy to make at home. The most important step is to activate the buckwheat (which might be why they are so expensive) to minimize the amount of phytic acid in the grain (see my post on activation and on phytic acid When buckwheat is soaked for a few hours, it gets pretty slimy so make sure you rinse the groats really well.

Sprinkle the Buckinis over fruits or yogurt or pour almond milk over them. They will taste delicious no matter how you use them.


A great alternative to maca powder is raw cacao powder which will make “Chocinis”. They pair extremely well with fresh strawberries and vanilla yogurt.

The soaked and rinsed buckwheat groats are mixed with cinnamon (has a plethora of other impressive health benefits) and maca powder, which not only gives it a delicious taste but has also positive effects on hormone balance, energy levels, and boosts overall health. Maca is rich in vitamin B vitamins, C, and E. It provides plenty of calcium, zinc, iron, magnesium, phosphorous and amino acids. Woohoo!

  1. 1 cup buckwheat groats
  2. 2 tbsp maple syrup or manuka honey
  3. 2 tsp cinnamon
  4. 2 tsp maca powder
  5. pinch of salt
  1. Soak buckwheat groats overnight in water with 1 tbsp apple cider vinegar.
  2. Next morning, rinse them well.
  3. Put the groats back into the bowl and cover them with water again. Soak them for another 8 hours.
  4. Rinse well and drain.
  5. Stir in the remaining ingredients.
  6. Place the groats on a dehydrator tray lined with parchment paper and dehydrate overnight. Alternatively, place them on a baking tray overnight in the oven on the lowest temperature. Leave the door a tiny bit open so the water can evaporate.
  7. Stir the groats the next morning. If they are still moist, flip and dehydrate for another hour. If they are dry, store them in a jar in the fridge.
