Corn, Avocado and Bean Salad with Vinaigrette

 Fresh corn and avocado salad is a deceptively simple combination of these two delicious vegetables. Use sweet fresh or frozen corn. Fill it in a tortilla or eat it simply as a salad.

  1. 3 large tomatoes, washed and cubed
  2. 1 large avocado, pitted, peeled and cubed
  3. 1 can cannelloni beans, rinsed well and drained
  4. 1/2 sweet onion, chopped
  5. 2 cups frozen corn kernels
  6. 1/4 cup fresh parsley, chopped
For the vinaigrette
  1. 3 tbsp lemon juice
  2. 1 tbsp extra virgin olive oil
  3. 1 tsp dijon mustard
  4. Sea salt, freshly ground black pepper
  1. Place all salad ingredients in a salad bowl and mix well.
  2. Combine ingredients for the dressing in a small jar with a lid, close and shake vigorously. Pour over salad and serve.
