French Upside Down Pear Tart

This recipe is a plant based version of a traditional French pear tart. It looks very impressive but is very easy to make with the help of vegan puff pastry sheets.

  1. 4 pears, cored and peeled
  2. 1/2 cup dry white wine
  3. 2 tbsp brown sugar, divided
  4. Juice and zest of 1 lemon
  5. 1 cinnamon stick
  6. 1 tsp vanilla extract
  7. 2 puff pastry sheets, thawed
  8. 1 tbsp vegan butter, melted
  9. Vanilla ice cream (optional)
  1. Combine wine, 2 cups water, 1 tbsp brown sugar, lemon juice, lemon zest, cinnamon stick, and vanilla in a large saucepan. Bring to a boil, and cook for 5 minutes. Add pears, reduce to simmer, and cook until the pears are tender, 10-15 minutes. Remove pears from liquid.
  2. Meanwhile, preheat the oven to 375 degrees F.
  3. Pour the melted butter in a 9" square pan and sprinkle with 1 tbsp of brown sugar. Arrange pear slices tightly in pan.
  4. Place puff pastry sheets and top and tuck the ends in on the sides.
  5. Bake until for 10-15 minutes or until golden brown. Remove tarte from oven and let cool off for 10 minutes.
  6. Place a platter on top and turn pan around.
  7. Serve warm and top with vanilla ice cream (optional).
