Nutritious Delicious Kale Salad

 Kale is often times called the king of the heavy greens, because of its massive amount of antioxidants and anti-inflammatory flavonoids. Whatever dressing you may use, massage it into the kale with your hands to “wilt” the kale.

  1. 1/2 bunch of kale, washed and shredded by hand
  2. 1 handful fresh parsley, chopped
  3. 1 yellow or red bell pepper, deseeded and diced
  4. 1 avocados, pitted, peeled and diced
  5. 1 1/2- 2 tbsp tbsp lemon juice
  6. 1 tbsp hemp oil
  7. Sea salt, freshly ground black pepper
  1. In a salad bowl, combine all ingredients and mix well. Use your hands to massage the dressing into the kale leaves.
