Oil- Free Maple Almond Granola with Cranberries

Looking at the ingredients on granola packages or reading through granola recipes makes you think that granola is almost always sugar and laden and full of oil. But it doesn’t have to! Substitute the oil with unsweetened organic apple sauce and use less sugar and natural sweeteners like honey, maple syrup and dried fruits.

  1. ⅓ cup pure maple syrup
  2. 1 teaspoons vanilla extract
  3. 1/4 teaspoon salt
  4. 1/3 cup unsweetened applesauce
  5. 2 1/2 cups old-fashioned rolled oats*
  6. 3/4 cup activated whole raw almonds**, finely chopped
  7. 1/2 cup dried no-sugar or low sugar cranberries, chopped
  8. 1/2 cup dates, chopped
  1. Adjust oven rack to upper-middle position and preheat oven to 325 degrees F. Line a rimmed baking sheet with parchment paper.
  2. Roughly chop almonds.
  3. In a bowl, whisk together the maple syrup, vanilla extract and salt. Whisk in applesauce.
  4. Add the oats and almonds and fold the mixture together until all of the oats and almonds are thoroughly coated.
  5. Turn the oat mixture onto the prepared baking sheet and spread into a thin, even layer. Using a stiff metal spatula, compress the oat mixture until very compact.
  6. Bake until the top is lightly browned, 40 to 45 minutes, rotating the sheet halfway through baking.
  7. Remove the granola from the oven and let cool on a wire rack to room temperature.
  8. Break the cooled granola into pieces as large or as small as you like.
  9. Stir in the dried cranberries and dates.
  10. The granola can be stored in an airtight container at room temperature for up to 2 weeks.
