Orange Glazed Tofu with Brown Rice and Broccoli

 A really great and tasty way to eat nutrient loaded broccoli combined with whole grains and protein-calcium -and iron rich tofu. Dearly loved by our kids!

Orange Glazed Tofu with Brown Rice and Broccoli

For the broccoli
  1. 1 broccoli, cut in florets
  2. 1 garlic clove, minced
  3. 1 1/2 tbsp olive oil
  4. 1 1/2 tsp fresh lemon juice
For the rice
  1. 1 cup brown rice*, washed and drained
  2. 2 cups of water plus 1 tsp sea salt
For the tofu
  1. 1 package firm tofu, cubed
  2. 2 garlic cloves, minced
  3. 3 tbsp soy sauce
  4. 1/2 cup orange juice
  5. 2 tbsp rice vinegar
  6. 2 tbsp orange jam
  7. 1/2 tsp fresh ginger, minced
  8. 1 1/2 tsp cornstarch dissolved in 3 tbsp water
  9. 1 tbsp fresh parsley, chopped
  1. Bring water and rice to a boil, then simmer for 30 minutes until the water has evaporated.
  2. Meanwhile, in a steamer set over boiling water steam broccoli, covered, until crisp-tender, 4 to 5 minutes.
  3. While broccoli is steaming, combine garlic with oil, lemon juice in a small skillet and season with salt and pepper. Heat garlic mixture over low heat until garlic is fragrant. In a bowl toss broccoli with garlic mixture.
  4. For the Tofu mix soy sauce, vinegar, OJ, orange jam and ginger in a small bowl.
  5. Heat a pan over medium heat. Add garlic and tofu and saute for 4 minutes while stirring. Pour soy sauce mixture over tofu and saute for 3 minutes.
  6. Stir in starch mixture, bring to a boil and simmer until it thickens.
  7. Remove from heat and arrange with broccoli and rice on plates. Garnish with parsley and serve.
