Beautiful Red Cabbage Red Onion Pasta

The combination of the cabbage, red onions and pine nuts give this dish a unique color and a beautiful taste! You can grind the toasted pine nuts or leave them whole.

  1. 2 tbsp extra-virgin olive oil
  2. 2 medium red onions, very thinly sliced
  3. 4 garlic cloves, minced
  4. 2 pounds (8 cups) red cabbage, thinly sliced
  5. 1 cup pine nuts
  6. 1 package linguine
  7. Salt and freshly ground pepper
  8. Parmesan cheese (optional)
  1. In a very large, deep skillet, heat the olive oil.
  2. Add the sliced onions, cover and cook over moderately low heat, stirring occasionally, until they are soft, about 10 minutes.
  3. Add the garlic and cook, stirring, about 3 minutes.
  4. Add the red cabbage, cover and cook, stirring occasionally, until the cabbage is tender, about 20 minutes. Season with salt and pepper.
  5. Meanwhile, heat a small pan over medium heat and toast pine nuts until golden brown. Transfer to a food processor and grind until they resemble flour.
  6. At the same time, cook the linguine in a large pot of boiling salted water until al dente. Drain the pasta, reserving 1 cup of the pasta cooking water. Return the pasta to the pot.
  7. Stir in the cabbage onion mixture and the pine nuts. Add the reserved pasta cooking water and toss well. Season according to taste and grate Parmesan over pasta.
