Rotini Noodles With Zucchini Pesto

 This is one of our quick and easy weeknight meals. Far from fancy, but extremely tasty! Pair with a simple rocket salad with olive oil balsamic vinegar dressing and your all set for dinner.

Rotini Noodles With Zucchini Pesto

Ingredients
  1. 3 zucchini, thinly sliced
  2. 3 garlic cloves, sliced thinly
  3. 2 dried red chilis
  4. 1 tsp extra vergine olive oil
  5. 1/2 cup pine nuts
  6. 1/2 bunch fresh basil
  7. Sea salt and freshly ground black pepper
  8. 500 g Rotini (twisted noodles)
Instructions
  1. In a small saucepan toast pine nuts over medium heat.
  2. In a large non- stick skillet fry zucchini, garlic and chills until golden brown, while frequently stirring. Remove chilis.
  3. In a food processor, pulse nuts until they have a bread crumb like consistency.
  4. Add basil, zucchini and garlic. Process until the mixture has a coarse pesto consistency. Season with salt and pepper.
  5. In a large pot bring water with some salt to a boil and cook pasta according to package instructions. Drain and mix well with pesto, season again to taste and serve.
