Nothing brings out the aroma of chocolate more than coffee. This cake is absolute oil free, dairy free and sugar free-  so why is it still so delicious? The answer is simple. You don’t need any of the above ingredients to make a great dessert!

  • 1 cup plus 2 tbsp whole spelt flour
  • Pinch of sea salt
  • 3/4 cup raw cacao powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • Heaping 1/2 cup date paste
  • 1/2 cup unsweetened apple sauce
  • 1/4 cup strong decaf coffee (I use decaf for the kids)
  • 1 tsp apple cider vinegar
  • 3/4 cup almond milk
  1. Preheat the oven to 170 C (375F).
  2. Combine the first 5 dry ingredients in a large bowl and mix well.
  3. Mix the milk and vinegar in a large mixing bowl, and let set for a few minutes to activate. Stir in date paste, apple sauce and coffee.
  4. Sift the dry ingredients into the wet ingredients and combine well.
  5. Fill silicone muffin trays with the batter and bake for 15 minutes until a toothpick inserted in the center comes out clean.
